This recipe is super easy and full of lemon flavor. Ooie Gooie tartness best describes these lemon bars. . They are so good that while my mother and my grandmother was at my house they ate a few before leaving and my grandmother could not stop thinking about them, so she had to call to get the recipe so she can make for her church group. :) You can also make this recipe as lime bars, just substitute the lemons for limes and also good idea to add about 2 drops of green food coloring.
Ingredients:
- 1 cup butter, softened
- 1/2 cup white sugar
- 2 cups all-purpose flour
- 4 eggs
- 1 1/2 cups white sugar
- 5 tablespoons all-purpose flour
- 3 lemons, juiced
- 2 lemon zest
- powdered sugar
Directions:
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, blend together softened butter, 2 cups flour and 1/2 cup sugar. Press into the bottom of an 9x13 inch pan.
- Bake for 15 to 20 minutes in the preheated oven, or until firm and golden. In another bowl, whisk together the remaining 1/12 cups sugar and 5 tbs flour. Whisk in the eggs and lemon juice and zest. Pour over the baked crust.
- Bake for an additional 25 minutes in the preheated oven. The bars will firm up as they cool. Sprinkle powdered sugar on top when cooled, and cut into squares.
