Is it Lemon Bread or Lemon Cake? That is the argument going on right now at my house, however the one thing we can all agree on... This cake/bread is very yummy! Light and fluffy dessert! I like all things with lemon, lemon chicken, lemon pork, lemon bread, lemon fish, lemon lemon lemon. I love lemon! Anyway, I actually started to make this the other night in my bread machine, however that was a big flop that I blogged about here and ended up making white bread. So I had to give this another try, but this time make it in the oven.
I found this recipe on allrecipes.com, but I added more lemon zest and lemon juice, but cut down the milk to compensate for the lemon juice. I wanted a good strong lemon taste...and that is what I got, perfect in my book!
Kinda looks like a lemon too huh?
Lemony Lemon Bread Cake
Ingredients:
- 1/2 cup butter or margarine, softened
- 1 cup sugar
- 2 eggs
- lemon juice from 2 lemons
- grated lemon zest from 1 whole lemon
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/8 teaspoon salt
- 1/4 cup milk
- 1 TBSP confectioners' sugar
- In a mixing bowl, cream butter and sugar. Beat in eggs, lemon juice and zest. Combine flour, baking powder and salt; stir into creamed mixture alternately with milk. Pour into a greased bundt pan or loaf pan. Bake at 350 degrees F for 45 minutes or until bread tests done. Remove bread from pan; sprinkle confectioners sugar on top.
